It is basically a disc shaped, crisp and thin food, based on seasoned dough and enjoyed after cooking with dry heat or frying. Papad is the same dish, which in Tamil Nadu is called Papadums & Appalam and Pappadum in Kerala & Happala in Karnataka. How We Prepare Our Offerings?
We believe in serving a range which carries authentic taste, hence we avoid using machines and fully prepare varieties of Pappadam/ Papad/ Appalam using manual techniques. To prepare this crispy yet healthy snacks, in our premise, experts mix black gram flour with saly, black pepper, food grade alkali, vegetable oil and several other ingredients (of which flavor is used), they then manually knead this mixture. Depending on the flavor required, we also make use of rice, sabudana and many other items as a main ingredient. Following points define some other steps that take place after mixing of flour with other flavoring ingredient and prepare of dough:
- Prepared dough is left aside for few hours after covering it.
- Little oil is applied on the dough and it is again kneaded to make it softer.
- Out of the dough, small balls are prepared which further rolled out on the board in a circular movement.
- After this, papads are kept in direct sunlight for a day or two to make them dry.
When the papads are prepared, they are examined and the batches that are accurate in shape, thicknesses and several other quality examining grounds are packed in sealed material for dispatch in the market.
